Michelin starred Frédéric Vardon, ex Alain Ducasse protégé, is proud to be at the helm of his very own designer restaurant, The 39V and to steer you on a gastronomic voyage. On the contemporary menu he reproduces traditional cuisine with a twist, reinterpreted in a decidedly innovative way and with full respect paid to food producers, suppliers and the seasonality of products.
For starters, we particularly recommend the delicately marinated scallops or the generously large, soft-boiled free range eggs. The St Pierre, known also as John Dory, hand-dived abalone (Ormeaux) and delicious farm-reared chicken are some of the tempting main courses à la carte. Make sure you leave plenty of space for the mouth-watering Carre 39V chocolate dessertor the luscious lemon soufflé, Frederic Vardon’s signature dish.
